White Chocolate Funfetti Pudding Cookies Recipe

Secret ingredient that’s not a secret=package of instant pudding. Kids love this magical, colorful, edible creation.

White Chocolate Funfetti Pudding Cookies

Ingredients

  • 1 cup (2 sticks) salted butter softened, not melted ;)

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/2 tsp vanilla extract

  • 1/4 tsp almond extract

  • 2 cups all-purpose flour

  • 1 small box (3.4 oz) Vanilla Instant Pudding Mix (do not prepare)

  • 1 tsp baking soda

  • 1 cup white chocolate chips

  • 1/2 cup rainbow SPRINKLES (not rainbow nonpareils aka the “tiny ball” sprinkles)

Directions:

  1. Push them oven buttons to 350.

  2. In a large mixing bowl with a handheld mixer (or in a bowl of a stand mixer), add the softened butter, granulated sugar, and brown sugar. Mix for 1-2 minutes until it's creamy and combined.

  3. Add the egg, vanilla & almond extract. Blend together again until combined.

  4. In a smaller mixing bowl, add the flour, instant pudding mix (just empty the dry mix from box), and baking soda.

  5. Add about half of it into the wet ingredients mixture and beat together just until combined. Then add remaining dry ingredients & mix until combined.

  6. Add white chocolate chips until evenly mixed in. Once they’ve mixed in thoroughly add the sprinkles in last! If it looks like cookie dough then great job! If it looks crumbly or not pleasing to eat then something went wrong….

  7. Either use a cookie scoop for precision or a spoon if you don’t care about consistent cookies sizes. You should get about 24 of them. Use 2 cookie sheets lined w/ either parchment paper or sprayed generously. Bake for 10-12 minutes.
