German Pancakes Recipe

What do YOU call these bad boys?? I’ve heard “German Pancakes,” “Dutch Babies,” “Peter Pancakes.” Honorable mentions are: “Popeye’s Pancakes,” and my new favorite-“Hootenanny Pancakes.” I tried to do some research and if ya want to get real technical I came to the conclusion that they’re basically the same thing based on what it’s cooked in. Cast iron skillet=Dutch Babies. 9×13 dish=German Pancakes…? Someone help me out. Whatever you call them, they.gooood. USE A CAST IRON SKILLET OR A 9×13 PAN, one’s a circle and one’s a rectangle so it doesn’t freaking matter.

German Pancakes

Ingredients

  • 6 large eggs, room temp

  • 1 cup flour

  • 1 cup whole milk, room temp

  • 2 tbsps sugar

  • 1/2 cup butter (1 stick)

  • pinch of nutmeg (optional)

  • powdered sugar, fresh fruit, syrup for topping frenzy

Directions:

  1. Preheat that oven to 425.

  2. Mix 6 eggs, 1 cup of flour and milk, and 2 tablespoons of sugar & nutmeg until smooth. Batter can be mixed by hand or any blending device.

  3. Place butter in a heavy skillet (or 9x13 pan) and set in oven. Watch it melt before your eyes & soon as butter is melted (don't burn it!) add the batter to the pan, and put in oven again for 20 minutes, until this pancake/baby is puffed & golden.

  4. Lower oven temperature to 300 degrees and bake 5 minutes longer.

  5. Take out this Dutch Baby or German Pancake, cut into sections and serve it asap. Douse this baby w/ syrup, powdered sugar, or fruit, or all of the above.
