Chicken Chili Recipe
Total Time: 30 minutes
Secret ingredient that isn’t a secret = Coca-Cola or Dr. Pepper. I welcome either, no discrimination, only preferences. 🙂
Chicken Chili
Prep Time: 5 minutes
Cook Time: 25 minutes

Ingredients:

1 tbsp oil
-
1 onion
-
2 lbs chicken breast (chopped) *if you don’t have time to cook chicken I use canned chicken a majority of the time...use 2-3 cans of canned chicken. #notashamed

1 tsp salt
-
1 tsp pepper
-
12 fl ozs Coca-Cola or Dr. Pepper (1 can)

1 can (14.5 oz) tomato sauce
-
2 cans chili beans
-
1 can (14.5 oz) petite diced tomatoes

1 can (7oz) diced green chiles
-
2 tbsps taco seasoning
-
1 tsp chili powder
-
2 tbsps ranch dressing powder

1 tsp garlic salt
Directions:

Find a large pot & heat to medium-high heat. Add the oil. Toss chopped onions & cook for 4 minutes, until they soften up.

Add raw chicken (or drained chicken like me) & cook until no longer pink, 6-7 minutes. *if you are awesome like me & use canned chicken then congratulations, you saved 6-7 minutes. Go hug your kid for 8 seconds. Sprinkle with salt & pepper.

Then add coca-cola.

Stir in tomato sauce, chili beans, diced tomatoes, green chiles, taco seasoning, chili powder, ranch powder, & garlic salt.

Turn down the heat and simmer for 15-20 minutes on low-medium heat.

Serve with whatever your spicy heart desires-sour cream, cheese, tortilla chips, avocado, fresh lime, want me to keep going? Get the picture?
