Broccoli Cheddar Soup Recipe

Broccoli Cheddar Soup

Ingredients:

8 tbsps butter (divided in ½)

1 large onion (finely diced!)

1 large carrot (shredded or finely diced)

3 garlic cloves

½ cup flour
-
3 cups chicken broth
-
1 tsp dried mustard powder
-
1/8 tsp cayenne pepper *if you are a sensitive sally then take it easy w/ this one!

2 tsps salt
-
1 tsp pepper

3 cups fresh/frozen broccoli (chopped)

2 1/2 cups half-n-half
-
3 cups sharp cheddar cheese (grated)

garlic butter homemade croutons (optional)
Directions:

This is a gradual process so joy in the journey baby for optimal texture & taste!! Grab yer pot & start w/ medium heat. Toss 4 Tablespoons of butter and let it melt.

Add onions and carrots and cook for about 7-8 minutes, stirring often.

Add garlic and cook for 1 minute.

Add remaining 4 Tablespoons of butter. Stir in flour gradually. Add chicken broth and use a whisk to mix together.

Add dried mustard powder, cayenne, salt, and pepper.

Toss in that broccoli and half-n-half. Let it simmer down for about 20 minutes or until broccoli is softened.

Add cheese 1/2 cup at a time, stirring well after each addition. Listen to me honey-GRADUALLY add this in so you get a creamy texture and not grainy.

Taste for seasonings. Add more salt and pepper, depending on your taste buds. Serve with some croutons for some crunch in your life!
